Pumpkin Cranberry Breakfast Bars

Ingredients
  

  • 2 cups rolled oats
  • 1 cup quick oats
  • 1 cup flour
  • 1/2 cup packed brown sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • 1/2 tsp salt
  • 2 Tbsp cinnamon
  • 1 cup milk any kind
  • 1/2 29 oz can pumpkin not pie filling
  • 2 eggs
  • 2 handfulls Craisins
  • 1/2 cup walnuts

Instructions
 

  • Preheat oven to 350'.
  • Mix all ingredients except Craisins and Walnuts.
  • Fold in Craisins and walnuts.
  • Pour into a greased 9x13" pan.
  • Bake for 45 minutes or until done.

Notes

These can easily be made gluten-free!  To convert them, I simply use gluten-free oats and flour.  Then, I add 1 tsp xanthan gum.
 
Occasionally, when the flock is on strike, I omit the eggs.  The texture is a little different, but they're still tasty!
